Cinnamon Shortbread Cookies

5 cups packed almond flour
13 Tbsp. grass-fed butter
1/3 cup xylitol plus more for sprinkling
1 Tbsp. pure stevia (not a blend)
1 Tbsp. ground cinnamon
2 large eggs OR 3 medium/small eggs
(or 2 Tbsp. ground flaxseeds with 2 Tbsp. water)
Directions:
*** Preheat oven 350 º
1. Line cookie sheet with parchment paper
2. Beat butter, xylitol, and stevia until, light in color and fluffy
3. Add almond flour 1/3 of it at a time
4. Add cinnamon
5. Dough should be crumbly but when squeezed it holds its shape
6. Scoop a level tablespoon of dough and press it into the spoon until tight
7. Gently remove the dough from the spoon and reshape as necessary prior to
placing on the pan
8. Place on the cookie sheet close together.
9. Bake 8-12 minutes watching closely for a golden colored
10. Cool cookies on the pan to stiffen

These cookies were created while we were in the middle of candida dieting. Dinner plans with friends meant we needed a dessert. This one was easy to make and delicious. Our friends did not even realize we were “dieting.” You don’t have to be so precise with cookie size. We were because it looked nice to have a pile of cookies on the tray!
